CRAWFISH DIP

1/2 cup butter or margarine1 cup golden mushroom soup
1 large onion, finely choped2 Tbsp. parsley, chopped
1/2 cup bell pepper, finely chopped1/8 tsp salt, or to taste
1 clove garlic, chopped1/8 tsp. black pepper, or to taste
1 lb crawfish tails (with fat if available)1 dash hot pepper sauce
 1 cup green onion, chopped
Melt butter in a heavy saucepan. Sauté onions, celery, bell pepper and garlic in butter until onions are clear. Do not allow to brown.Add crawfish tails, salt and pepper. Cook for about 15 minutes.Add mushroom soup, tops, parsley, hot sauce and crawfish fat (if available).Cook over low heat for about 10 minutes. Serve with chips or crackers.
