10 cups cucumbers, finely chopped3 Tbsp. mustard powder
5 cups onions, chopped2 Tbsp. mustard seed
5 cups green bell pepper, seeded, finely chopped1 Tbsp turmeric
5 cups green tomatoes, finely chopped1/4 tsp ground cloves
1/2 cup salt2 tsp salt
3 pints cider vinegar1 cup flour
 
Sprinkle vegetables with 1/2 cup salt; mix well. Let stand 24 hours. Drain thoroughly by squeezing out excess water.
In a separate bowl, mix dry ingredients well with small amount of vinegar, then add remaining vinegar. Bring to a bubbling boil, stirring constantly, in a large pot. Add drained vegetables and cook over low heat for 45 minutes, stirring constantly..
Put into sterilized pint jars and seal at once.
Yield: 6 pints
